Adding a Strymon Iridium to my board. I have the Mondo, and the Iridium requires an adapte rwith the following rating: 9VDC center negative; 500mA minimum.
I think what I need to do is use the HX Current Doubler Cable on the 2-9V 400mA outputs to create an 800mA 9v, but really don't want to assume and try to power it up... Can somebody let me know if that's going to fry my pedal?

It can be done, but...
The HX Current Doubler Cable has a 2.5mm connector to the pedal (whereas the Iridium has a 2.1mm power jack). Thus, the connection might be a bit loose and power could intermittently shut off.
Also, you can use 400mA and 100mA capacity outputs, as 500mA is sufficient (800mA is fine too but not necessary).
Thus, I recommend instead:
To power the Iridium with Pedal Power Mondo, use a Current Doubler Adapter, part# PPAP in a 9VDC 400mA and 9VDC 100mA output with one of the all black (standard polarity) cables supplied.
